    hi!
    A threaded pot directly into the motor shaft, looks quite dangerous...

    During the setup phase, you will have to wire the pots (red and black wires) accordingly to motor rotation (red and black wires), if wrong : the pot will break...

    During the testing phase, many things could go wrong (code, wiring...) and break the pot...

    I'd strongly advise you to use a coupling between pot and shaft.

    I know that I can not make a mistake with the electrical connection (polarity) of the potentiometer because I will damage it immediately.
    In the future I want to use Hal's potentiometers.

    Is it enough to shield only potentiometer cables?
    Should the cable shield be connected to ground?

    what's your current status with the build, i'm thinking of building a 6dof platform with wiper motors, i likes your idea of dual motors for each axis to double the torque, did it work ?
