I have come across this E-Stop made by Bajer which includes 3 extra buttons which can be used for various reasons (positioning, etc.). it says it is compatible with the Thanos Controllers, does anyone know if it would also be compatible with the ODrive Controllers?

Please be aware that the diagaram in the link you posted is not a suitable E-Stop!
An E-Stop has to be NC, not NO! If your wire breaks your E-Stop will be useless!
It's always best to use used industrial hardware for this (like a PILZ E-Stop Relais) and cut the power completely. A software solution can only be an addition.

To your original question: as far as I'm aware, the odrive only has a software e-stop command via CAN (which is even not the highest priority...)
