I am gathering parts for my new build and did a brief search but couldn't easily find an answer. What is the recommendation for seatbelts? 4 or 6 point? Would you mount the back to basically the seat or is there another easy way to tension them? I have seen some use bungee cords.

I personally started with a 4 point harness but now use a 3" 5 point harness, as that prevents the belt riding up, but it is a matter of personal preference.

Bungee cords or springs are both ways to have what I call a parasitic harness, that is the effect is generated by the seat movement not the harness. But you can instead have a telemetry driven harness, see the FAQs here: https://www.xsimulator.net/community/faq/harness-tensioner-simulation.361/

I think I might just start with the basic springs and see how far I get. I am slightly worried about scope creep with the project and rather get something working and then modify as I go instead of trying to get to max from the start.

I can fully appreciate that and think you will find a parasitic harness is a simple, functional and cost effective addition to your rig.
