I would try checking the file integrity first, if it's on Steam then you can do this from the Steam console, otherwise go for a reinstall. If that's all OK, then it could be an overheating or faulty graphics card perhaps? I think the pit stop animations can be taxing on the graphics card. Do you have any issues with any other games or applications?

The other thing it could be is a corrupted custom pit setup. You could try logging in as a new player and see if it crashes with a different user name/driver.

These things always bother me too. I hate an unsolved problem. If it is always related to the pit crew detail, there must be something there which is causing the crash. Custom liveries can include custom pit crew detail. Do you have have any custom files in:
    C:\Program Files (x86)\SteamLibrary\steamapps\common\Project CARS 2\Pakfiles\Pitstops
If you have not already done so, it would be worth deleting everything in the Project CARS 2 folder and re-downloading/re-installing it.

It may be that you are happy with turning the detail off instead though, it doesn't add much to the game anyway, no real loss. :think
