If I am going to buy the Pimax 5K mostly used for racing simulations, which tracker/tracking system would be the best (most accurate) solution?

Do you mean will it make a difference between first and second gen Lighthouse then not really, as most of the Lighthouse 2 advantage is larger room scale tracking volume, not improved tracking resolution.

Any other options to the Lighthouse? On the other hand the Lighthouse tracking system is quite well sophisticated.

Only the onboard tracking, but that is not as robust as Lighthouse. Pimax should work fine with just one Lighthouse emitter.
