I played the DCS game to make the plane spin. I observed the ROLL and found that its output could not change from 0 to 100 in an instant.
When the plane rotates clockwise at 180°, turn it in this direction again, the value should be 0 and become 100% instantly.

Absolute rotation angle is not something you want to use directly as motion cue, it won't produce realistic motion cues. You need to use accelerations, like rate of rotation of the angle or accelerations for linear directions too...

Those full 360 pitch/roll rigs, sure look cool arcade like from outside, but once inside you'd wish you never even thought about it.

But that is if you ever pilot real airplane...

The freedom of three rotations should be an absolute position to simulate.

Can you clarify what exactly you simulate with the three absolute angle rotations??? Just wondering...

I want to use the output value of 0-100% to correspond to my - 180 °- one hundred and eighty °, I want the output value to be 0-100 1023-0-1023.

Won't happen... you just said you wanted to use absolute angle rotation. That's what it is.

If I use the output value to control the acceleration, a small and persistent value will make me rotate continuously. Or how can I set it so that I can 360 ° Spin?

There is your answer... you are not trying to simulate realistic flight... :popcorn

The plane turned 360 degrees clockwise °, If I use simtools data now, my cockpit will actually turn 180 clockwise °, Then turn it 180 degrees counter clockwise °。 This is not right. I want a specific solution to make my cockpit rotate 360 degrees clockwise °。

A solution has been discussed in a recent thread, just some research needed.

I'm not completely clear on what you are asking. Sounds like you might want one full 360° spin and not continuous spin in one direction?

If continuous spin is what you want instead, sounds like maybe you want to enable Euler angles instead of angular rates in the DCS Export.lua script?

A user here made a nice SimTools interface for the YawVR where we can spin with plugins using angular rate data or when using a limited yaw axis still be able to use plugins with Euler angle data behave better than using anti-rollover. Currently this is just in the YawVR SimTools Interface though. So anything seems possible with a little bit of code.
