its not so diffucult to build it yourself using a AS5048 Magnetic Rotary Encoder

The chips are certainly inexpensive but Hall sensors are also available in standard potentiometer-style packaging as well. @Deeppl doesn’t say where he is located to know what kinds of sources to suggest so just know they are available in all sorts of form factors - bare chips, standard potentiometer bodies, and specialized form factors. A web search should turn them up and sources.

Thanks for the answers. I am from Poland.
I think ordinary potentiometers are causing me problems.
The signal seems to be disturbed by momentary jumps.
What do you recommend? I can't really find them in my country, at least for a reasonable price. $ 250 apiece is out of my range.

$250 is way out of line. Be sure to watch the specs. We don't need ultra-high precision, ultra-wide temperature ranges, etc, and those kinds of things can drive prices up. I don't know what their policies are to ship to Poland, but even if just for reference, check out digikey.com and search for Hall sensor, also position sensing, etc. It's hard to find a wider selection and they link to datasheets. Might not have parts available to you and vice versa, though.

The companies I have bought parts from in the US are DigiKey, Mouser, Jameco, Arrow, and Allied. Looks like you have a number of options in Poland, though, but no idea what their selections are like.

Your spiking could be a flaky wiper in a regular potentiometer and Hall sensors remove that. Wipers going open can obviously wreak all sorts of havoc in a motion sim.

And one thing about the Hall sensors built like potentiometers - they have the same issues with misalignment that regular pots do. Put too much sideways force on a shaft and it can gall and stick. Just something to watch for. My preference for that reason is two-piece, sensor and magnet, where it is total non-contact but that's just me.
