    What is the prefered pivot between a good old U joint and a cv joint for 2DOF and why?

    Some CV joint allow lateral rotation and you don't want that, a u-joint has no issues.

    What do you mean by lateral rotation? If you mean spinning like an office chair, I don't see how that's possible. I do think a CV joint might be less suited to axial loads (the weight of the rig and driver pushing down on it) as I think the direction of the grooves would tend to multiply the compressive forces on the balls.
